How to Efficiently Caramalise Onions?
While browning onions for a gravy or a curry, add a little sugar (I add brown sugar) to the onions. The ratio is 1 Teaspoon to 1 Kilogram of onions.
Once the onions have been slowly cooked down, they release their spicy notes and tear-inducing gasses and leave only sweetness behind.
This will help in the caramelization process to move faster and save you time. It will also help in making a richer and delicious gravy.
